A spreadsheet with that info would be ideal - for generating scenarios.

There are various charts and graphs with that information that I have seen. I think they were all on this Forum somewhere.
One lists the planes with all the WoG information as well as the years the planes were in use. Another one was a graph from a French source that made it easy to see which aircraft were in use at any one time.
I am sorry I don't have the details or links to direct you to these resources. However, I am sure someone more familiar with the Forum will do it for you soon. Otherwise, keep looking in Files or Threads and you may stumble across them yourself.

Nice list Wayne. I have not seen some of them so now I know. Don't forget the UNOFFICAL list (DTD 2016). This is my go to list for planes.
This gives time of service in quarters. 17Q2 to 18Q1 for example.
Problems in giving dates include;
A handful of aircraft may have been sent to the front for evaluation, months before seeing service or combat (Example - Fokker Dr.I prototype)
Aircraft long obsolete for front line service may have been used for training and extemporised home defence years after withdrawal.(Example, Sopwith Pups were still flying in Home Establishment when the Gotha raids ceased in 1918).
In the Middle East , again obsolete types were used many months after withdrawal from front line service.(Example - the last operational DH2 was stricken in Egypt in January 1918)
In the Eastern Front, anything that could fly was used. If it couldn't fly, they'd try to fix it. Older, simpler and more easy to maintain types sometimes outlasted later ones. Only when aircraft were utterly worn out were they cannibalised to keep others going. (Example - there were still 4 Albatros D.IIs in frontline service in Poland in November 1918)
The dates given are approximately when the type first saw widescale active service on the Western or Italian front, and when it was no longer considered suitable for front line service. Having the dates to the nearest quarter covers early introduction of a few, and having a handful still in operation as spares.

They were derived from the Frontbestand data, Philpott's The Birth of the Royal Air Force, and Davilla and Soltan's French Aircraft of the First World War, respectively.

My app has a Scenario Builder and it counts aircraft value points if you want to make it balanced.
Just click on a particular month of WWI and you get a list of available aircraft.
