There is a difference in roll rate, perhaps. There are only two side slips in the K deck, where there are three in the J. This means the plane flying the K deck can't perform endless sideslips.
That is a difference in performance. Subtle, but a difference.
In the WWII game, a few of the decks have sideslips that only allow high speed maneuvers on one card, and the other card, with the slow maneuver is a steep. Or, there might be other very subtle differences.
It has to do with how the game designer decided to implement the performance envelope of a given plane, within the limitations of the game mechanics using a maneuver deck.

Looking closely at my WoW J and K decks, the only difference I can see is that the K deck does not have an immelmann. In all other respects they are identical.
Yes. There is an Immelmann card in the J deck that isn't in the K deck.
Please count the sideslips, too. The K deck should only have two to each side (12, 13 to the right, 14, 15 to the left), where the J deck should have three (13, 14 15 to the right, 16, 17, 18 to the left). If that is not the case, I have work to amend on the MATES cards.

'J' has three sideslips each side, and 1 Immelmann
'K' has two sideslips each side, and has no Immelmann
The arrow lengths on the decks are identical to each other.

I thought I had carefully counted the number of cards, especially the side slips because they were mentioned in the original question. However, I stand corrected (or I got a dodgy second hand J deck!)
