The "Over the Trenches" campaign has a section in the rules, but I don't know of any WWII campaign with similar tables.
Hmmm... you could use the same charts, I suppose, and change the wording a bit. There were networks of underground/resistance cells that assisted downed pilots back to England, if allies were shot down over the mainland. Not much for the Germans shot down over England. There was Air/Sea Rescue (ASR) for both sides, if pilots ended up in the channel. However, the RAF shot down any Axis ASR planes spotted.

Yes I would suggest using the rules written in OTT the Bitter End Campaign for German Pilots Parachuting & the Dice roll for evading capture.

I recently did an AAR for the 586 Regiment, in the WWII section, and I used the OTT C&W/E&E rules as well as using the parachute tables. I made a few changes on the parachute table to reflect the advances that were made.
The changes were:
Shot Down
1-2 Roll C&W/E&E
3-6 Land Ok Roll E&E If in Enemy Territory
Flame/Collision
1-3 Roll C&W/E&E
4-6 Land Ok Roll E&E If in Enemy Territory
Explosion
1 KIA
2-4 Roll C&W/E&E
5-6 Land Ok Roll E&E If in Enemy Territory
I'll have to try them more with more scenarios.

The OTT rules are specifically tailored for WW1, survival rates are based in the actual survival rates.
There is no rule for a parachutes use - it's an option (if you have one) and you roll on the parachute table for survival not the crash/wound table (unless wounded as well then you roll on that in addition). I wouldn't recommend them for WW2.
Instead look at the 'Fire in The Skies' Campaign Rules in WW2 Campaign Discussions as that has parachutes as part of the crash/wound table.

I'm going to run an RPG and have the following D6 rules using Savage Worlds system but WoG mechanics for flying.
Bailing out of a plane that can still fly (In case it is very low health and the player wants to ensure pilot living) No roll.
Plane at 0 to -5 health, -2 on pilot skill roll
-6 to explosion, -4 on pilot skill roll.
One chance per 5000 feet that the combat initially took place
