Great place for a young person to land a job IMO ... for those who have a relevant skill/trade.

You are so correct. Those are generation projects. The skill set to restore and maintain those planes has to be passed on. I have the unique opportunity to see restoration work in progress on WW2 and WW1 replica planes. Some local students at a aviation maintenance school did the work on this Nieuport 23. It was a student project after hours with school instructors supervising.
