I'm toying with the idea of splashing out on a two-seater or two and I was wondering which of these (any nation!) people tend to favour and why?

Bristol F2B -- a 2-seater with an Immelmann; you figure it out. :)
Depends on what your doing with it. If your using it in a dogfight, then either the Bristol fighter or the Halberstadt CL.II.
For a historical PR, bombing or recon mission, I like the DH-4 0r Rumpler.

The Halberstadt and Bristol Fighter are the most fun, in my opinion. They've got interesting maneuver decks (two-seaters with Immelmanns!), the best models (especially the Halberstadts, which have some of the best paint schemes Ares has run out), and they're actually easy to pick up since they were only just released last month!
I enjoy flying two-seaters. I like the DH-4 and the Roland with the large rear firing arc. I haven't had a chance to fly the Bristol yet, but it looks like it will be a fave.
Bristols are great dogfighters but you already have scouts that do that, but it depends on what you want the 2 seater to do! Choosing a two seater that is good at defending itself means you miss out on difficulty factor of the "protect the two seater" type scenarios. I would suggest, as Jager says, choose something thats more historicaly mission specific for my first two seater a DH4, RE8, Rumpler etc. Get the the Bristols in your next (later) purchase for some porcupine fun.
Depends too on what period of the War you wish to play.
For early War then the venerable BE2c is a must.
For later then the RE 8 was the recon warhorse & the DH 4 the bomber of choice.
For the Germans then the Roland & Halberstadt.
Any two seater is fun to use, my favorite is the Roland with it's fantastic rear firing arc, or the DH4 British option for it's climb rate.
The Halberstadt and Bristol Fighter for the fact they can do an immelmann turn.
I would go with 2-seaters that fit in with what you have got already working from an historical time line. That way they should be reasonably balanced. We find it hard at the club to stop the 'uber gamers' from flying the best, most up gunned aircraft they had against aircraft that were sadly outdated. Campaign wise they weren't interested just wanted to fly what they wanted against aircraft nobody could match as at the time we had no aircraft of a similar date to balance the odds.
Early wars the German scouts predominantly were used to escort the 2 seaters who were vulnerable to attack. Later (1916) they were let of the leash to 'hunt' the enemy scouts. You could try and arrange your purchases around this and what you have scout wise. Check the files for the WGF data:

I like the Rolands when flying Central Powers and the DH4 and RE8 for Entente when flying 2-seater missions (as opposed to dogfighting, when the Brisfit is a good choice for the reasons others have already enumerated)
Too little love is given to the UFAGs! They have a great combination of hit points and maneuver deck--try them! They are not a Brisfit (no immelman) but are great planes that were workhorses in the A-H air force.
Those would be the same ones that always turn up with the best tanks in ground games whether it was historically correct or not. Every club or campaign has at least one. We usually laugh at them, and they end up playing with themselves... which is why, of course, they're 'uber gamers' in the first place !
To answer Peters question - buy them all !!
I suggest that you consider buying a Bristol F2b and a Halberstadt CL.II whilst they are available because popular models sell out quickly. Then when Ares re-release series 2 think about also buying a DH4 and a Roland C.II, if you can afford them.
It is well worth having a look at what Dom has in stock. I have picked up a Bristol Fighter from him today. The one with the bombs underneath and A firing rear guns.

Probably going to go for the Roland and DH4, so I can use those in a range of missions. If I got the Brisfit, I'd probably end up charging into combat and forgetting all about the photography mission!
For two seaters, if you want fighter type, then as, has already been said, Bristol and Halberstadt while they are still new.
Personally I prefer the Roland, why? Pure nostalgia as this was the first Airfix model I made as part of the old dogfight double series.. Plus the all around field of fire helps too
For Brits the DH4
You can't go wrong with a Harry Tate - and they're slow enough to catch !!
DH.4 - beautiful flying box with nice clear camouflages (especially the brown one).
