Well, the only way for a P51 to get a Me262 was to hit it when it was not moving at full speed.
They had to catch the Me 262s while these where starting or landing.
An other way to get them was in a steep dive thus reaching a higher speed.

I've found an very interesting documentary on the Me 262 with a lot of witness reports from pilots.
