So if that's the case, can you perform an Overdrive maneuver to help remove the fire? And can this be done if your plane is on fire?

Yes you can perform an over dive to kill the fire Ash, the Dive card is not a straight and the following straight card is counted as part of the dive process - this has been ratified by Andrea, the games designer, in the past. When/if I get time I'll try to find it.
The 'Long Straight card' is the only 'straight' in the manoeuvre deck and is denoted by the upward pointing arrow in the lower left corner beside the decks identifying letter - if a card has any other symbol, or, no symbol at all, it is not regarded as a straight for the purposes of the game.
